T oliko onih što pate, onih ranjivih, onih što bi da mu kažu koliko su sreć- ni... Svi oni sede pred njim za šan- kom. Pamti one koji su se upoznali u njegovom baru, pa se venčali i imaju decu, a sad dolaze kod njega da slave godišnjice. Dušan Zarić (48) jedan je od najboljih bar- mena na svetu, onaj koji od mora ukusa stva- ra baš onu pravu kombinaciju koja raspame- ti i najveće probirljivce. Zato ne čudi što je festival Tails of the Cocktail pre nekoliko go- dina njegov bar Employees Only na Menhet- nu proglasio najboljim koktel-barom na svetu. – U moj lokal put je naneo i jednog sau- dijskog princa. Šta smućkati čoveku koji ne pije alkohol. Morao sam da mu napravim be- zalkoholni koktel, ali izgledao je kao pravi. I on se pravio da je tako i sve je to bilo veoma dobro – počinje Dušan svoju priču. Priču ko- ja je počela mračnih devedesetih, a koja traje više od dve decenije. Kao student mašinstva, sa dvadeset i ne- što, otisnuo se u nepoznato i krenuo u potra- gu za američkim snom. U ono što će mu po- stati profesija, ljubav, životni poziv uveo ga je mentor Dejl Degraf. He remem- bers everyone who met there, then went on to get married and have children, and who now come to his place to celebrate their anniversaries. Dušan Zarić (48) is one of the world’s best bartend- ers, one who from an ocean of flavours creates exactly the right combination that will delight even the picki- est customer. Thus it’s no surprise that a few years ago, the “Tails of the Cocktail” festival declared his Manhat- tan bar“Employees Only”the world’s best cocktail bar. - My bar also happened to be on the route of a Sau- di prince. And what do you blend for a man who doesn’t drink alcohol. I had to make him a non-alcoholic cocktail, but it looked like the real thing. And he made out that it was and it was all very good – says Dušan, beginning his story. This is a story that began in the gloomy ‘90s and has lasted for more than two decades. As a student of mechanical engineering at the age of 20-something, he headed into the unknown and start- ed chasing the American dream. He was introduced to what would become his profession, his love, his life call- ing, by his mentor Dale Degraph. It is still a secret what magic attracts a man to be a bartender, to stand be- hind a bar and reveal everything that is his soul, which he wouldn’t even confess to himself. The magic, Dušan claims, is in acceptance.
