BEOGRADA Belgraders might swear by traditional Serbian cuisine and old kafana taverns, but they are also open to new, exotic tastes and modern ambience. The combination of these two tendencies is usually a direct hit, and this has been the focus of three relatively new Belgrade-based restaurants that are the talk of the town

ISTOK ISTOK

I stok (East) is the first restaurant of Vietnamese cuisine in Belgrade, and people are talking about it across the Balkans. Local connoisseurs are in- spired by the famous Pho Ga soup, rice paper rolls, caramelised pork etc. How- ever, staff revealed to us that the balance of spices has actually been slightly adapt- ed to local tastes. The most sought after speciality of the house is the traditional Vietnamese Pho Ga soup from beef, al- though in the meantime the menu has been enriched with a version made from chicken, as well as a vegetarian option. The space itself is decorated “in the spir- it of Vietnamese cuisine” – a simple and practical interior, such that the warm light of lanterns and colourful service put spe- cial emphasis on the dishes. I stok je prvi restoran vijetnam- ske kuhinje u Beogradu, a priča se i na čitavom Balkanu. Ovdaš- nje gurmane izazvao je čuvenom supom pho ga, rolnicama od pirin- čanog papira, karamelizovanom svi- njetinom. Doduše, zaposleni su nam otkrili da su ipak balans začina malo prilagodili ovdašnjim ukusima. Naj- traženiji specijalitet kuće je tradici- onalna vijetnamska supa pho ga od goveđeg mesa, mada je meni u me- đuvremenu obogaćen i verzijom s pi- letinom, kao i vegetarijanskom opci- jom. Sam prostor uređen je „u duhu vijetnamske kuhinje“ – jednostavnog i praktičnog enterijera, tako da topla svetlost lampiona i šarenilo servira- nih jela posebno dolaze do izražaja.
