From the Animal Friends Alliance Meet Pingo, a Cat Who Loves to Be Petted!

This month we bring you another profile of a great animal from the Animal Friends Alliance. Meet Pingo, a female, domestic shorthair cat who is 3 years and 3 months old!

Here's Pingo's blurb from the website:

“Hello, everyone! My name is Pingo. I am a little bit of a unique kitty — I really like to be petted! I love pets all over my body, and I'll stretch all the way into your hand for them, but I also really like to find a nice quiet place to hide in. It does take a little bit of time for me to trust people. If you are patient with me and gentle with me, I will make biscuits all day long for you. “I do like other cats, so I won't mind having a friend. I would appreciate my new home to be calm and patient with me so I have time to really become the kitty I know I can be. Plus, look at how cute my face is! The Best Grilled Summer Vegetables

Contrary to popular belief, vegetables are delicious. Most of our parents just didn’t know how to prepare them well. This summer, revolutionize your cookout with a serving of delicious, colorful veggies.

Ingredients:

1 tsp salt

mushrooms, red onion, red bell peppers, baby carrots, and yellow squash are great on the grill)

1/4 tsp pepper

1 1/2 tsp dried Italian seasoning

1 1/2 tsp garlic, minced

5 tbsp olive oil

2 lbs assorted vegetables, trimmed and halved (asparagus,

2 tbsp lemon juice

1/4 cup parsley leaves, chopped

Directions:

In a small bowl, combine salt, pepper, Italian seasoning, and garlic. Brush vegetables with olive oil and place in a large bowl. Top with lemon juice and seasoning mixture. Toss to coat evenly. Cover and refrigerate for at least 20 minutes but no longer than 2 hours.

Prepare the grill at medium- high heat. Grill vegetables in batches, cooking 3–5 minutes on each side until browned and tender. (Carrots will cook longer, 6–9 minutes per side.) Remove from the grill, sprinkle with parsley, and serve hot.
