MOTHER’S DAY FRENCH TOAST

Directions 1. Make 2 almond butter and banana sandwiches, dividing

Ingredients

banana slices and almond butter evenly between each sandwich.

• 4 slices Ezekiel bread

• 2–3 tablespoons raw or natural almond butter

2. In a large bowl, combine almond or coconut milk, eggs, vanilla, cinnamon, and salt and whisk until smooth. Soak each sandwich in the mixture for about 10 seconds on each side. 3. Coat skillet with the coconut oil, then heat to medium-high. When hot, cook each sandwich for 4–5 minutes on each side. If you’d like them extra crispy, press the sandwiches into the pan with your spatula before you flip them. 4. When your sandwiches are done, cut them however you prefer and add fruit and honey or maple syrup to taste. Breakfast is ready!

There’s no need to wait for your kids to spoil you this Mother’s Day. With our recipe for healthy stuffed French toast, you can treat yourself to a five-star breakfast! If you follow these instructions, you’ll get just the right amount of yummy toast for four servings, but you can easily double the recipe to get ahead on your food prep. To reheat the toasts, just pop them in a toaster oven until they’re warm and crispy on the edges. Even if you’re not a mom, you won’t want to pass up this treat.

• Your favorite fresh fruit, to taste (for topping)

• Raw, unfiltered honey or 100% maple syrup, to taste (for topping)
