Spice-Rubbed Rotisserie Ribs with Pineapple Glaze

This was the recipe in our first newsletter! I re-shot the pictures for our recipe book (coming soon), so I figured I would share this recipe this month. 1. Prepare ribs by removing the membrane of the back of the ribs. Apply your favorite Caribbean rub to the ribs. I make my own. If you have any of the rub I gave away at the clinic, just add some cinnamon, clove, and nutmeg and you have a Caribbean rub.

2. Place the ribs in a large baking dish or large Ziploc bag and let them sit in refrigerator for a few hours or as long as overnight… the longer the better. Remove ribs from refrigerator prior to cooking so they return to room temperature.

3. Set up your gas or charcoal grill for spit roasting (per grill instructions) for medium heat.

4. Use a foil drip pain to prevent fat from dripping into your grill.

5. Cut a hole every 2 or 3 ribs for the spit. Weave the spit through the ribs. It is not as hard as it sounds.

6. Put spit on grill and start motor (see first pic).

7. Fill a clean spray bottle with pineapple juice and spray the ribs as they cook to add additional favor and to keep them from getting dry.

8. Ribs are done when the meat pulls back from the bone about ¼ to ½ inch. About 1-1.5 hours (pic 2).

9. Remove ribs from spit (use heat-proof gloves/oven mitts) since the spit will be hot. The ribs can be sliced into individual ribs and served as an appetizer (pic 3). While the ribs cook you can make your pineapple glaze. 10. In a small saucepan, mix 1.5 cups of pineapple juice and ½ cup of brown sugar. If you like, add 1 cup of spiced rum to the mix. Cook over medium to high heat to reduce the mix (meaning the ingredients will thicken) to create the glaze for drizzling or dipping the ribs. Enjoy!

Asbonewearsonbone, the surfaceof thebones actually start to change shape.This thins thebones in the neck in someparts leading to a lossof heightbetween thebones.Due t abnormalwearand tear,newbone forms where it shouldn’t, creeping into the holeswhere the spinal cord passes through. In addition it can rub on the nerves out to your neck, shoulers, arms and even hands. This can lead to a condition called cervical spinal stenosis,whichcanbequitepainful. Whatcanbedone tohelpneckarthritis? Whilepainmedicationscanhlp control pain, they don’t address the root cause of the pain,which is poor strength and lackofnormalmovement.Theneck jointson the sideof the spinenormallyexperiencewearand tearover theyears.However,when this wear and tear is accelerated due to poor posture,weakness or injury, this cn lead to limited,painful rangeofmotion. Inaddition,withneckarthritis, thesmallermuscles thatguide themotions of theneckbecomeweaker,eventually leading tomore rubbingandarthritis. Bygentlystretching these tightand restricted jointswithspecifichandson therapyandexercises,rangeofmotioncanbereturned.Whilephysicaltherapy canot restore the cartilage or change the bony structure, it can certainly helpyourneckmovebetter,becomestronger, reducepainandgiveyou the pwer tostayhealthier longer. Try this simple test. See if you have restricted cervical joints.Standwith yourbackagainst thewall.Canyou touch thebackofyourhead to thewall whilekeepingyourchin level? Ifyoucannot, thenyourneck jointsare limited andyouneedphysical therapy to restore the rangeofmotio.

This is a great appetizer for the holidays. It looks fancy but is quick and easy tomake.Yourguestswill think you are agourmet chef!

Thecheesecanbe smokedonagasgrill if youmakea smokerpack. Iused the charcoalgrill.

Youwillneeda cedarplank, camembert cheeseorabrie (soft creamy cheese), pepper jelly, and1-2 jalapenos.

Place theplankon thegrill for1-2minutesa side.Youwill see somegrillmarksand youwill start to smell the aroma of the cedar plank. (See thegrillmarks in the picture).

Spread the pepper jelly on the cheese. Slice the jalapeno in half, remove the seeds if you like it on themildside,andarrange jalapenosliceson topof thecheese.Slice the jalapenocrosswisewith the seeds if you like it spicy.Place the cheese in the plank. Place the plank on the grill (indirect heat) no flame under the plank. (See picture).Add a fewwood chips to the charcoals.Use smoker pack if using gas grill.Cook about 10minutes until the cheese becomes soft.Some of the cheesewill start to ooze out.
