FRUITED POT ROAST 12 dried apricots 12 dried prunes 1 3- to 4-pound chuck pot roast 1 cup cider or appie juice 2 tablespoons sugar '/* teaspoon ground cinnamon % teaspoon ground ginger 3 whole cloves 1y2 cups sliced onions Cover apricots and prunes with water. Soak several hours. Meanwhile, brown pot roast on both sides in a little hot Tat; season with salt and pepper. Combine cider, sugar, cinnamon, ginger, and doves; pour over meat. Add onions. Cover; simmer 2 hours or till meat is almost tender. Drain fruits; place atop meat and cook 30 min­ utes longer. Thicken liquid in pan for gravy. Serves 6 to 8. On a recent radio program I talked about carrot cake. A listener had sent me a recipe fo r it but it was fo r 50 people so I casually asked fo r a carrot cake recipe fo r six or eight. What hap­ pened was that I received recipes from all over the United States. I tried sev­ eral and finally chose this one from Mrs. J. Guy Hopkins, Sr. o f Spray, No. Carolina, fo r two reasons; I have all the ingredients on hand and it is very simple to make. Oh, yes, it’s sim­ ply delicious too! Mrs. Elaine Hopkins Jr. lives in Fullerton, and sent back East fo r her mother-in-law’s marvelous recipe. CARROT CAKE 1 Vz cup sugar 1 cup Wesson oil 3 egg yolks (save whites to use later) 2 Vi tablesp. hot water 1% cup o f flour 1 teasp. cinnamon 1 teasp. baking powder Vi teasp. nutmeg Vi teasp. soda pinch of salt Mix all ingredients. Then beat egg whites and fold into batter. Bake in tube pan or large flat pan. Bake at 350° fo r 50 minutes. MY CHILD SAID THAT? Finally his moth­ er went outside to settle the problem. “ What’s wrong, Steven?” she asked. “ Mother,” he said, “ I was too there when Jesus was born, wasn’t I ? ” “ Well,” his mother hesitated . . . “ I was too there,” he said firmly, “ you told me I was there. A Jewish boy accepted a tract, "Isaiah's Por­ trait of Messiah" and immediately asked, "Can you tell me more about this?"
