P outine is a famous French- Canadian artery-blocking fast- food concoction. Now’s the time to give it a try, as leftover turkey is the star of this easy version. If you can’t find fresh cheddar cheese curds, use mild cheddar and simply crumble it into small pieces with your fingers. Tip: eve- rything has to be ready for quick assembly when the french fries are cooked. (Serves 1) • 2 cups crispy french fries (homemade or frozen) • ½ cup gravy (or a little more, to taste) • ½ cup fresh cheese curds Ingredients
• ¼ cup frozen green peas (canned peas could also be used, but they won’t have the beautiful bright green colour of frozen peas) • ¾ -1 cup cooked turkey, cubed Preparation 1. While the french fries are cooking, heat the gravy in a small saucepan. Add cubed turkey. 2. Warmpeas inmicrowave, taking care not to overcook them. 3. Place hot french fries in a large bowl; sprinkle with cheese then pour gravy and diced turkey over them. Add peas and serve immediately.

T he holiday season is a time of plenty during which we can all thank Mother Nature for her countless treasures. Poulet au miel et au romarin
V oici une recette facile et déli- cieuse qui permet de mettre en valeur les coupes plus abordables du poulet. Ingrédients (Pour 6 à 8 personnes) • 2 kg de morceaux de poulet (poids ap- proximatif ) : pilons, cuisses avec ou sans dos, poitrines avec les os (sans la peau) • 1 gros oignon haché • 1/3 tasse de miel liquide • 3 c. à table de beurre • 3 c. à table d’huile végétale • 1 citron (jus) • 1 c. à thé de romarin séché • Sel et poivre Préparation 1. Préchauffer le four à 325 °F. 2. Dans une grosse cocotte pouvant aller au four, faire fondre le beurre et l’huile. 3. Y faire revenir l’oignon sans le laisser brunir, puis y faire dorer les morceaux de poulet sur tous les côtés. Saler et poivrer. 4. Pendant ce temps, dans une petite cas- serole, porter à légère ébullition le miel, le jus du citron et le romarin. 5. Verser la préparation liquide sur le poulet et enfourner à couvert. Après une heure de cuisson, tourner les morceaux de pou- let et poursuivre la cuisson à découvert durant 30 minutes (total de 1 h 30 de cuisson).

Feuilles de laitue farcies au porc à l’asiatique
V oici une recette à la fois facile et délicieuse — une excel- lente idée pour une entrée conviviale à déguster autour d’un îlot de cuisine! Tout peut se préparer à l’avance : il ne restera qu’à réchauffer la préparation de viande au mi- cro-ondes avant de servir. (Pour 12 rouleaux) • 12 feuilles de laitue (Boston ou iceberg) • 1 livre de porc haché • 1 c. à thé d’huile végétale • 1 oignon haché finement • 2 c. à thé de sauce hoisin • 1 gousse d’ail hachée finement • 2 c. à thé de gingembre frais haché fine- ment ou râpé • 1 c. à thé de vinaigre de riz • 1 c. à thé de sauce soya • 2 oignons verts hachés finement • Sauce nuoc-mâm (sauce de poisson) Préparation 1. Bien laver et assécher les feuilles de laitue en prenant soin de ne pas les déchirer, puis réserver. 2. Dans une poêle, faire brunir le porc dans l’huile durant quelques minutes. Égoutter le gras, puis réserver. 3. Remettre la poêle sur un feu moyen, ajouter un peu d’huile et faire revenir l’oignon jusqu’à ce qu’il soit translucide (sans le faire brunir). Remettre le porc dans la poêle et ajouter la sauce hoisin, l’ail, le gingembre, le vinaigre de riz et la sauce soya. Faire chauffer durant quel- ques minutes et retirer du feu. Ingrédients

En voyant les fils de la petite araignée scintiller dans la nuit, le père Noël eut une idée brillante : celle de lui confier une mis- sion. Depuis ce temps, c’est Adèle qui tisse toutes les guirlandes de Noël qui décorent les maisons et les sapins. »
« Il était une fois une araignée qui n’arrivait pas à tisser comme les autres. Ses fils n’étaient ni solides ni collants. Chaque jour, sa maman lui enseignait la bonne technique. Lamaman araignée s’installait sur une bran- che d’arbre; elle lançait son premier fil qui flottait dans le vent avant de s’accrocher à une autre branche. La grosse araignée faisait des allers-retours sur ce pont suspendu en le remplaçant par un fil de plus en plus résis- tant. Puis, à partir du milieu, elle se laissait tomber en produisant un autre fil.

“Is that how you got the cardinal?”
“Yes, that’s right. I was very young.”
“So it’s really old?”
“Yes,” Gramma laughed. “When I saw it in a shop window, I prayed that Santa would bring it to me for Christmas. Daddy said it wasn’t really a suitable gift for a little girl. But Christmas morning came and there was the precious cardinal. I was thrilled. I promised I’d always keep him safe.”
