Beware of food poisoning! Every year, thousands of people fall victim to food poisoning after eating food that was not prepared, cooked, or stored according to health guidelines. This is particularly true during the holidays, when there are usually more parties, meals and generous portions! Fortunately, all you have to do is to follow a few basic rules in order to enjoy the festivities without risk of falling ill. Salmonella, E. coli and listeria are definitely not meant to be on your guest list. To avoid the spread of bacteria, be sure to wash your hands frequently (in hot, soapy water for at least 20 seconds) and wash with soap and hot water all kitchen worktops, utensils, and anything else used during meal preparation. Beware of cross-contamination: always wash fresh fruit and vegetables and keep raw foods separate from cooked food or food that is ready to be eaten. Use different chopping boards and ensure that foods reach their correct internal cooking temperatures. At this time of year we inevitably prepare too much food, so be sure to keep any leftovers in the fridge, ideally at a temperature lower than 4° Celsius. Throw away any food that has been left at room temperature for more than two hours. Plan to eat up any leftovers as soon as possible, ideally in the next two or three days. An even better way to deal with leftovers is to quickly freeze suitable items and divide the rest into small portions to offer to your guests.

Allergies If you suffer from a food allergy you should immediately tell your host or hostess which items you can’t eat. Ask if a special plate without those items could be prepared for you, so you can enjoy the meal in complete safety. Then again, since erring on the side of safety is always best, preparing your own plate is perhaps the safest way to go.

Be sure to wash your hands frequently, as well as all kitchen worktops and utensils, in order to avoid the spread of bacteria.
