Blissful Blue Spirulina Collagen Panna Cotta
Ingredients (Serves 4–5) • 800ml coconut cream • 3 tsp blue spirulina/butterfly pea/blueberry powder blend • 4 tbsp Nutraviva Marine Collagen* • 6 tsp Nutraviva Beef Gelatin • 3¼ cups filtered water • 3 tbsp coconut oil • pinch Celtic salt • coconut yoghurt and blueberries to garnish Method 1. Combine gelatin and water in a saucepan off the heat. Stir and allow to bloom. 2. Gently heat until gelatin dissolves, stirring continuously. 3. Add all ingredients to a blender and blend until smooth. 4. Adjust sweetness to taste, then pour into moulds or glasses. 5. Refrigerate until set. Garnish with coconut yoghurt and blueberries. * Nutraviva Collagen Hydrolysate can be substituted for Marine Collagen. • 6 tbsp maple syrup • 3 tsp vanilla essence
