What is matcha? Japanese matcha tea is a fine powder made from green tea leaves, which are primarily grown in two Japanese regions: Uji in Kyoto and Nishio in the Aichi prefecture. Matcha tea leaves are specially shade-grown over the course of three weeks, which shields the plant from direct sunlight and contributes to matcha’s bright green colour. Shielding the plant from sunlight also increases its content of the amino acid, theanine, which gives matcha its distinct flavour. How is it made? The leaves are hand-picked and go through a strict process of being steamed, dried, destemmed, and deveined before being ground into a fine powder. While this process is traditionally completed with a stone mill or a mortar and pestle, machines are now often used. Matcha vs Green Tea: Matcha and green tea have different flavour profiles and health benefits. Matcha has a richer, sweeter flavour and frothy texture; green tea has a light, fresh taste, with grassy/earthy undertones. Matcha has a higher concentration of nutrients and antioxidants, contributing up to six hours of energy compared with green tea’s one to two hours’ worth.
How do I use it? Matcha is highly concentrated, so a little goes a long way. It can seem costly compared to regular green tea, but its benefits reflect its price tag. A suggested serving size is half a teaspoon (2 g). Traditional ceremonial preparation of matcha uses a whisk.
