SOMEONE SHOULD BE FIRED! THE STATE OF THE VETERANS ADMINISTRATION IS A DISGRACE

If someone promises to fix something once you hire them, but then they don’t do squat once they have the job, they should get fired — plain and simple. Six months into Trump’s presidency, it’s clear he’s not doing the job we hired him for. You only have to look at the Veteran’s Administration to see that. Right now, the VA has 45,000 open positions, a number that has not changed significantly since Trump took office. No wonder veterans can’t get the care they need. There’s a three- to four-YEAR waiting period for disabled veterans trying to get taken care of, because there’s nobody there to take care of them! Imagine going into a new doctor’s office. Nobody’s at the front desk; the place is crowded and massively understaffed. Even with an appointment, you have to wait three hours to see someone, and sometimes you get told to come back the next day.

Would you go back to an office like that? Absolutely not. But that’s the situation our veterans — men and women who fought for our liberty — find themselves in today. It’s especially disgraceful this month when we celebrate Independence Day. We wouldn’t have that independence without servicemen and servicewomen, and this is how our government repays them? I’ve seen clients try to get the treatment they need time and again, and every time, I know how it’s going to end. But thanks to the federal bureaucracy, it doesn’t matter. We have to keep playing the same foolish game while American heroes lose both time and health to the underfunded, understaffed behemoth that is our Veterans Administration. If you want to know who to blame, look no further than the bunch of idiots we have in Washington — including the president, who ran as a man of the people but clearly doesn’t care about taking care of

actual American heroes. Some people might say that he hasn’t had a chance to “drain the swamp” yet, but I think if you can’t do the job you should resign. “Are we really stuck with this president for another 3½ years?” When he was on “The Apprentice,“ Trump made a big deal out of firing people who couldn’t do the job. Well, I say we fire him and keep on firing right down the line. Forty-five thousand unfilled positions at the VA? Why don’t we make our politicians fill those jobs until we can hire some competent, qualified medical professionals to do it full-time? Oh right — because our politicians are even less qualified to hand people numbers at a VA clinic than they are to run a government. If you can’t do the job, resign or be fired. It’s as simple as that. – Wade Coye

DIY RUBS AND SAUCES Don’t waste money on premade barbecue rubs when you likely have all the ingredients in your spice cabinet. Barbecue sauce is also simple to make — and much healthier when you know what’s in it. Check out these recipes that work wonders on grilled foods. Rub: In a bowl, combine 1/3 cup paprika, 1/3 cup dark brown sugar, 1/4 cup kosher salt, 4 teaspoons ground mustard, 2 teaspoons freshly ground black pepper, 2 teaspoons ground coriander seed, 1 tablespoon dried oregano, 1 tablespoon garlic powder, and 1 tablespoon onion powder. Barbecue on a Budget SAVE MONEY ON YOUR SUMMER COOKOUT Sauce: In a saucepan over medium-low heat, combine 1 cup chicken broth, 1/2 cup ketchup, 1/4 cup dark molasses (plus more to taste), 1 small onion, grated or diced, 2 tablespoons Worcestershire sauce, 1 tablespoon brown mustard, 2 tablespoons cider vinegar (plus more to taste), 2 teaspoons hot sauce (plus more to taste), and 2 tablespoons spice rub. Simmer and whisk until sauce coats the back of a spoon. You can store cooled sauce in your fridge for months after your party. Follow these tips, and you’ll shrink the cost of your summer cookout. Spending an afternoon by the grill is a summer tradition, but it doesn’t need to end with your money going up in smoke. Sprinkle on meats and vegetables. Really, it’s that easy.

Nothing says summer quite like gathering around the grill for a delicious meal with friends and family. If you’re not careful, though, your summer barbecue can end up putting a big dent in your wallet. You don’t need to break the bank to host an awesome get-together. Here are a few money-saving tips for your next cookout. MAKE SMART PROTEIN CHOICES Meat is the most expensive food you’ll purchase. You can save a lot, however, if you make smart choices at the butcher counter. Not only are chicken thighs and legs cheaper than boneless breasts, but they’re also less likely to dry out. Flank and skirt steak are great alternatives to pricier cuts of beef. If you want some seafood on the menu, buy what’s fresh and on sale. DON’T FORGET TO GRILL SOME VEGGIES Your grill isn’t just for searing meat. Vegetables, from corn and asparagus to zucchini, are delicious when cooked over a flame, and they are cheap and readily available during the summer. In addition to filling stomachs for a lot less, you’ll add some options for vegetarians and health-conscious eaters. MINIMIZE WASTE If you’re not careful, a lot of your barbecue budget will end up in the trash — or evaporating into thin air. Ditch the disposable plates and utensils in favor of cheap, reusable options. Another common waste is fuel overuse, whether that’s charcoal or gas. If you have a gas grill, turn off the propane as soon as possible. If you use charcoal, you don’t need to dump a full 10-pound bag into the grill. A few pounds should do the job just fine.

ONE-PAN MEXICAN QUINOA This healthy, tasty, filling dish is a cinch to make on a busy weeknight. And cleanup’s a breeze!

Ingredients

1 cup corn kernels, frozen, canned, or roasted

1 tablespoon olive oil

1 teaspoon chili powder

• • • • •

2 cloves garlic, minced

½ teaspoon cumin

1 jalapeno, minced

Salt and pepper to taste

1 cup quinoa

1 avocado, halved, seeded, peeled, and diced

1 cup vegetable broth

Directions 1 (15-ounce) can black beans, drained and rinsed 1 (14.5-ounce) can fire-roasted diced tomatoes 1. Heat olive oil in a large skillet over medium high-heat. Add garlic and jalapeno and cook, stirring frequently, until fragrant, about 1 minute. 2. Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder, and cumin; season with •

Juice of 1 lime

2 tablespoons chopped fresh cilantro leaves

salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. Stir in avocado, lime juice, and cilantro.

3. Serve immediately.
