Apple, Rhubarb & Brazil Nut Crumble

Ingredients • 600 g chicken thighs • 400 g Brussels sprouts, halved • 300 g sweet potato, cubed • 1 tbsp olive oil • 1 tsp Organic Road Turmeric Powder • 1 tsp smoked paprika • Juice of ½ lemon. Instructions 1. Preheat oven to 200°C. 2. Toss chicken and vegetables with olive oil, turmeric and paprika. 3. Arrange on a tray. 4. Roast for 30–35 minutes until golden and cooked through. 5. Filling ingredients • 3 apples, sliced • 1 cup rhubarb, chopped • 1 tbsp honey • 1 tsp Organic Road True Cinnamon. Crumble ingredients • ½ cup Organic Road Certified Organic Rolled Oats • ¼ cup Natural Road Almond Meal • ¼ cup chopped Organic Road Raw Brazil Nuts • 2 tbsp Organic Road Coconut Oil or butter. Instructions 1. Preheat oven to 180°C. 2. Combine filling ingredients in a baking dish. 3. Rub crumble ingredients together until coarse. 4. Scatter over fruit. 5. Bake for 25 minutes until golden.
