When we talk about exemplary service and dedication to your craft at Foodtown, one of the names that comes to mind most often is Fernando Sanchez. After 20 years of service at multiple Foodtown locations, Fernando knows all the ins and outs of managing a meat department. Even more impressive than his dedication and knowledge is his respect for his team. “I love the team I have here at Foodtown of Kensington. Everyone works together to deliver a great product, and we’re very close. We’re like family,” Fernando says. Employees feeling like part of a family is exactly what we strive for in our culture, and a big part of that starts with our open- door policy. “I’ve known the owners for years, and they’re very good to us. Their lines are always open. You can get in direct contact with them over the phone. If there’s ever any problems or something you need to change, they are ready to listen. Food safety is essential in every step, from your initial purchase, to preparing it for dinner, to storage. Here are a few great tips to keep in mind when handling food. Separation • Keep raw meats, seafood, and poultry in separate bags. • Keep raw meats, seafood, and poultry away from fresh produce while preparing and serving. • Never place cooked food or produce onto the same surface that held raw meats. • Store raw meats on lower surfaces than ready-to-cook foods in the refrigerator. Cleaning • Before handling any food, make sure your hands are washed. • Surfaces that food will touch should be cleaned and sanitized. • Before eating or preparing fruits and vegetables, wash them under running water. • Clean out your fridge once a week — throw out any food that can’t be eaten. • Appliances should be cleaned, inside and out, especially where cross-contamination can occur. Hot and Cold Foods • Use a food thermometer to ensure the food is cooked safely and held at the right temperature. • Never eat cooked food that has been left out at room temperature for two hours or longer. • Keep cold and hot foods out of the danger zone: 40–140 degrees F. • Cold foods should be kept chilled, at 40 degrees F or lower. • Hot foods should be kept warm, at 140 degrees F or hotter. • Make sure to cook all foods, such as seafood, poultry, egg dishes, and meats to their appropriate, safe internal temperatures. By following these tips, handling food will be a breeze. You’ll find yourself eating happily and healthily! KNOW HOW TO HANDLE YOUR FOOD The Right Approach Will Keep You Healthy

seasoned roasts for customers. We teach them exactly how to cook a cut to their version of perfection. We do it all,” he says.

A Personal Message from Noah Katz, Co-President

Please let me share something personal about Thanksgiving. Every year when my family gets together for Thanksgiving, it’s about 20 or more people with my parents, my sisters, and my brother and their spouses, all our children, and any friends who join us. Before we start eating, we always go around the table and each person, including the kids, says what they are grateful for this year. It’s a very nice moment during the holiday to hear what everyone has to say. I’d like you to know what I’m grateful for this year. I’m grateful for my family: my amazing, beautiful wife, Deborah, and my two beautiful children. I’m also grateful to be part of an amazing company that has close to 1,000 very hardworking people. I’m grateful for all of our amazing team members. I’m also grateful for you — that you have chosen to spend your hard-earned money in our stores and that you trust us to supply you with food for your families. Here’s my suggestion for you to do this year at your Thanksgiving table: Go around the table and say what you’re all grateful for. You’ll be amazed at the magic that happens as you go around the room. Thank you!

Like anything else, small, family-run businesses with caring staff pay more attention to the products they sell and the service they offer their customers. It’s true for us, and it’s true for the family-run farm we purchase all of our sweet potatoes from for the Thanksgiving holiday season and beyond. It’s Vick Family Farms in Wilson, North Carolina. Their yams are really amazing because they are so consistent and sweet tasting. There really is a difference between these sweet potatoes and many mass- grown yams sold in other stores. We were in contact with Vick just recently because they were definitely impacted by hurricane Florence. They had some flooding, and they lost some of the crop this year, but they will still be able to handle our needs for you and your family for the Thanksgiving holiday. This is all the more reason to support them this year so they can recover from the storm.

SWEET POTATO PIE

Ingredients • Pastry for a 9-inch, double-crust pie • 3 medium sweet potatoes (about 2 1/4 pounds), peeled and sliced into 1/4-inch rounds • 1/2 teaspoon salt • 1/2 cup granulated sugar Directions 1. Heat oven to 425 F. Line a 9-inch pie plate with one layer of pastry; set aside. bring to a boil over high heat. Reduce heat and simmer until sweet potatoes are just barely tender when pierced, about 5 minutes. Drain slices and rinse with cold water until cool to touch. Drain slices well; transfer them to a large mixing bowl. 3. Add sugars, lemon juice, flour, and pumpkin pie spice to sweet potatoes. Toss gently with a 2. Combine 1 cup of water and salt in a large saucepan. Add sweet potatoes; cover and

spatula until slices are evenly coated. Spoon sweet potatoes into pastry- lined pie plate and dot top of potatoes with butter. Place top pastry over filling and crimp top and bottom pastries together to make decorative edge. Cut 3–4 slits in the top to allow steam to escape. 4. Bake in oven until crust is browned and sweet potatoes are tender when pierced, about 50 minutes. If edges of crust start to brown too quickly, drape lightly with strips of foil.

5. Cool pie on wire rack for at least 1 hour. Serve warm or cool.
