Shannon Kulhay was always sick as a kid. She remembers being on round after round of antibiotics to treat infections, but never really understood what was going on — or why she felt so terrible. “I was misdiagnosed for 18 years,” said Shannon, who finally went to a naturopath and underwent allergy testing as a young adult. “What we discovered was that I had a massive number of food allergies.” After cutting out the food that she was allergic to, mainly wheat and dairy, something miraculous happened. No more infections. Her anemia cleared up. The migraines disappeared. “It was life changing,” she said. This revelation inspired her to pursue nutrition at Queen’s University. She then learned about electro- dermal computerized allergy testing and phase contrast microscopy, a service she now provides at the Kulhay Wellness Centre & Vitamin Shop here in Erin.
