You are welcome at La Vierge. Our wines are founded on a simple philosophy I employed over twenty years ago: Choose the site - Trust the site. I was fortunate to find a beautiful, natural amphitheatre while exploring the upper part of what is now the Hemel-en-Aarde Ridge. Covered in wattle and almond trees in some disrepair, it became evident that the natural slopes and varying exposures to wind, sun, and rain were exactly what I was looking for. We prepared this land and planted dryland vineyards, encouraging the vines to draw deeply from the soils, to flourish and suffer at nature’s whims, and express our terroir in the most authentic way possible. We’ve embraced sustainable practices because we see ourselves as stewards of this land, preserving its beauty and vitality for the future.
In the cellar, we patiently dedicate ourselves to purity and quality, gently and carefully guiding our wines to best express their subtle complexity.
I hope that this menu takes you on a journey where each pairing honours the land of our wine and of our food, and the stories they tell.

At La Vierge, our wines are a true reflection of the distinctive terroir of the Hemel-en-Aarde Ridge, where a combination of unique soils, climate and topography converge to create ideal conditions for growing exceptional Pinot Noir and Chardonnay. The vineyards are situated within a natural amphitheatre, which offers a rare 360-degree exposure to the surrounding weather systems. This geographical feature ensures that each vineyard block experiences a dynamic yet balanced interaction with the various weather conditions throughout the growing season, allowing for a nuanced and multifaceted expression of the land.
