I n cooking school, we were taught the five French “mother sauces” as defined by the twentieth-century master of French cooking, Auguste Es- coffier: béchamel, velouté, sauce es- pagnole, sauce tomate, and hollandiase. The foundational sauce to the Afro-Asian flavor profile is what we call the Mother Africa sauce: West African peanut sauce. You can pour it over a bowl of rice. You can dice up a sweet potato and mix it in as a stew. It tastes delicious with the meat of the chicken thigh crumbled into the mix. This sauce will keep for five days in the fridge and you can eat it every day, in a different way. It is an easy back pock- et sauce that you can’t mess up. UDON NOODLES WITH EDAMAME AND WEST AFRICAN PEANUT SAUCE Serves 6–8 Prep Time: 15 minutes | Cooking Time: 1 hour

In Brazil, there is an African population and a Japanese population that live really up close together, and both grew up on udon. West African peanut sauce is the mother sauce: peanut butter, tomato paste, tomatoes, French mirepoix, and our special mirepoix. In the end it’s like a pad thai with more frequent flyer mileage in its account. There’s nothing like eating noodles and pasta when the sauce is really right, West African peanut sauce provides the perfect creamy coating for the Japanese udon noodles.

• 2 cups warmed Mother Africa Peanut Sauce (below) • 1 pound udon noodles • 1 cup shelled edamame, boiled in salted water for 5 minutes • ½ cup cilantro leaves • ½ cup Thai basil leaves Heat the oil in a wok over medium heat. Stir fry the carrot and the onion for 1 minute. Add the peanut sauce and stir to coat. In an 8-quart pot, bring water to a boil, salt it, and cook the noodles according to the package directions. Drain and add the noodles directly to the peanut sauce mixture, tossing to coat. Plate the noodles and top with edamame, cilantro, and Thai basil leaves. Add the onion, carrots, tomato, celery, garlic, bay leaf, cilantro, chili, salt, and lemon juice, stirring to coat the vegetables in the toasted cumin oil. Sauté until the vegetables soften, about 5 minutes. Stir in the tomato paste and cook for 2 minutes. Once the tomato paste is incorporated, add the peanut butter, working it into the vegetables with a little stock, if needed. Cook until the oil separates from the peanut butter, about 5 minutes. Add the stock and stir, making sure to bring up all of the tomato paste and peanut butter from the bottom of the pot so it is well blended. Increase the heat to medium high to bring the sauce to a simmer. Cook, stirring, for 45 minutes. Remove the bay leaf. Using an immersion blender, puree the sauce in the pot until smooth. Season with salt to taste.

• 1 tablespoon olive oil • 1 cup julienned carrot • ½ cup thinly sliced onion

THE MOTHER AFRICA SAUCE Makes about 4 cups Prep Time: 15 minutes | Cooking Time: 1 hour • 1 tablespoon olive oil • ½ teaspoon cumin seeds • ½ white onion, diced

• ½ cup coarsely chopped carrots (1 medium carrot) • 1 plum tomato, chopped • ¼ cup finely diced celery (1 rib) • 1 clove garlic, minced (1 teaspoon) • 1 bay leaf • ¼ cup chopped fresh cilantro • 1 bird’s-eye chili, seeded and minced (1 teaspoon) • 1 teaspoon kosher salt, plus more to taste • 2 tablespoons fresh lemon juice (from 1 lemon) • 2 tablespoons tomato paste • 1 cup unsweetened, creamy peanut butter • 4 cups vegetable stock Heat the oil in a 4 quart pot over medium heat, add the cumin, and fry for 1 minute, stirring constantly. The cumin will become very aromatic and a few shades darker.

WEST AFRICAN PEANUT PUNCH Serves 6 Total Time 10 minutes You’ve never had anything like this rich bourbon cocktail. The peanut base makes it creamy, spicy, and salty. • ¾ cup roasted peanuts • 1 ½ cups bourbon • ¼ cup chile honey (store bought, or you can make your own by warming 1 cup honey with 1 tablespoon chile powder for 5 minutes and then letting it cool) • GARNISH: roasted peanuts Put the peanuts and 2 cups water in a blender. Blend on high until the mixture is completely smooth. Strain into a large chilled pitcher. Stir in the bourbon and honey, making sure the honey is completely dissolved. Serve over ice and garnish with peanuts.

T he bath is no longer a room where pure practicality and function reign supreme. It has metamorphosed into a deeply personal space to rest, recharge, and rejuvenate. With a growing worldwide desire for wellness and relaxation, the bath has become the home’s hidden sanctuary. With this need to close the door and effectively escape the real world, the designs incorporated into the bath have become more important than ever. From bathtubs to toilets to faucets and sinks, the focus on solely utilitarian de- sign has been put to rest. Mood lighting, night lights, deep soaking tubs with a toe push and lumbar support, custom- izable and stylistically versatile collec- tions, and high-tech toilets with heated seats and Bluetooth connectivity are just some of the ways technology and design have merged to create an oasis of wellbeing in the bath.

THERE IS NO LIMIT TO THE OPTIONS AVAILABLE TO LIGHT THE MOST PERSONAL SPACE IN YOUR HOME. F or most people, lighting the bath is an afterthought. When redoing this essential space, big—and sometimes expensive—decisions have to be made about fixtures, plumbing, and consider. A good lighting plan should include task lighting at the mirror, overhead lighting, and mood lighting. A relaxing bath at the end of a long day won’t be quite as effective with super-bright spotlights overhead.

surfaces. But lighting can make or break the ambience of a room in which you begin and end your day. Light and color have a positive effect on emotional well-being. Consider the Scandina- vian countries where scientists studied the re- lationship between the lack of sunshine during the long polar nights, and seasonal affective disorder (SAD), and as a result created light therapy to help those affected. As the bathroom becomes a place to relax and recharge, lighting is an important thing to

Cove lighting—rope lights hidden behind a molding several inches below ceiling height—adds a soft glow. Vanity lighting should be mounted on either side of the mirror at eye level, for even illumination across the face. W hen the owners of this Chelsea townhouse decided to renovate the historic home, they called in designer AnnBritt Newey and architect Michael McCaffery. The couple bought the home in the 80s and raised their family there, but once the kids left home they decided it was time to do a gut renovation. “When we started to remove drywall,” says Newey, “we discovered that not only was the property leaning dramatically, but also there was no mortar left. It was literally a pile of bricks.” Working with con- tractor JF Roesemann Builders, they began to peel back the layers and discovered that everything was compromised. “There were areas where we could see charred brick, where there had been localized fires. The structure needed to be rebuilt.” In addi- tion to securing the building, they also decided to raise the roof a couple of feet to give the third floor some more headroom, and added a rooftop terrace overlooking the High Line. “The third floor had 7-foot ceilings which is very tight, so we raised the roof about three feet and were able to give them a staircase to the roof.” While the designer and architect changed and modernized the floor plan, they kept the original functions of each floor intact. The ground floor or service level, which is below street level, is the kitchen and dining area, the first floor is the parlor level, the second floor is the master bedroom suite, and the newly enlarged third floor is the guest bedroom suite. Says Newey, “We wanted to

be respectful of the history of the home, but we also used modern finishes and amenities and made the floor plan more livable.” In order to avoid the darkness of a below grade kitchen, she chose bright white finishes and reflective surfac- es. The counters are quartzite, which mimics the feel of mar- ble but is much more durable. The windows at ceiling height let in the sunlight. A powder room off the kitchen is covered in metallic floral wallpaper that is traditional, yet modern. The master suite includes a spa-style bath covered in Calacatta gold marble, which Newey chose to warm up the room. “I wanted it to feel very calm and clean, but also inviting. The gold tones in the marble really warm up the feel overall.” The fireplace is new, and non-functional. “There had been a fireplace there at some point, but that flue was closed up. We thought it added a nice architectural element.” The glass-enclosed shower seems to float in the room, and adds contemporary contrast to the marble and more tradi- tional fittings. The room also includes an undermount tub with a marble surround, and a custom, double sink vanity. “The couple really wanted to do everything right in this renovation. Once the structure was completed they chose the finest finishes, accessories, and furnishings.” ■

W hile white is often the default color for baths, an infusion of color might be just what the doctor ordered when it comes to the most personal room in the home. Color can enhance emotional well-being,

and there’s no better place to do that than in a room that is all about relaxing and washing your cares away, or starting the day with energy and gusto. Just like with any room in the house, you don’t have to go full rainbow to start adding color to your bath. Fixtures,

like tubs, toilets, and sinks, now come in every different hue. If you aren’t ready to make a com- mitment to colorful fixtures, a fresh coat of paint, a colorful wallpaper accent wall, or lighting and accessories can satisfy the color urge without re- quiring a major investment. An all white bath can take on a fresh new look with a cheerful, bright marigold pendant lantern, and a traditional bath can be made modern with a painted wall in a current color, like blush pink. If you are ready for technicolor, try a wallcovering like Cole & Son’s Prism paper, from their Geometric II collection. And if you have a freestanding tub, the base can be painted in a matching or contrasting color. Just make sure you select a finish that is both waterproof and durable. Don’t be afraid to experiment with accesso- ries, and even art or sculpture. Accent pieces are a great way to experiment with color before embracing the rainbow. ■

Fisher Mansion into the triumphant 22nd Junior League of Detroit (JLD) Designers’ Show House. The collective commitment and talent of top designers, contrac- tors, members, sponsors and volunteers laid cornerstone to its tremendous success. “Our dedicated team of JLD volunteers, corporate and in- dustry sponsors and extremely gifted interior designers from across the country produced a spectacular showhouse that well exceeded our fundraising goals,” said JLD Show House Chair, Liana Dabir. “Nearly 10,000 visitors came to experience the beau- tifully reimagined 1922 estate, which enabled us to surpass our fundraising goals and achieve a net profit close to $400,000. The showhouse included standout design in every room, that merged the old with the new. Forty distinguished inte- rior designers transformed the mansion’s 18,000 square feet to its original majestic grandeur, but with a modern twist. Imported European fireplaces, black wal- nut-paneled walls, carved wood-

en chinoiserie medallions and rare Flint Faience tiles are just a few of the opulent details that made this showhouse a standout in design. Bold color stories were in evidence throughout, and the diversity of design was shown in four baths, from the master bath to an outdoor garden oasis. ■

B lack and white will always be the most versa- tile and elegant design combination, even today when surfaces, paints, and fixtures come in a full rainbow of hues. While most designers opt for primarily white baths with black accents, there is a growing trend towards reversing that order and making black the dominant color. While all-black can seem overwhelming, it can work in every style, from classic and traditional to sleek modern. If you aren’t ready to take the plunge to all black, consider

working it in with tiles and fixtures, while softening it with an of-the-moment color like celadon, as in the elegant bath by designer Courtney McCleod of Right Meets Left Design. In a small guest bath she created a starburst pattern on one wall, using the Kelly Wearstler multiple marble collec- tion for Ann Sacks, and she tweaked the design to fit the space and to mimic the joyful excitement of fireworks. In front of the graphic design McLeod placed a Kohler Kath- ryn double sink console. The polished nickel legs and black top add glamour, and because she didn’t want to break the

design with a mirror she hung it on the side wall. A black, wall hung toilet is a thoroughly modern ele- ment, but works in the elegant space. “It’s the first time I’ve used black fixtures in a bath but it really works here, and the Memoirs collection is brand- new and so chic,” says McLeod. Adding contrasting elements helps to lighten the design. Against a black wall, white fixtures shine. Against white walls with traditional moldings, a modern light fixture acts as a focal point. Touches of color, such as gold, navy, and celadon add ele- gant contrast. ■
