METHOD: Preheat oven to 180ºC (350ºF). Mix garlic, lemon juice, thyme, cumin, and olive oil. Coat chicken thighs, salt to taste, place in an oven-proof dish, and cook for about 20 minutes or until internal temperature reaches 77ºC (170ºF). Meanwhile, prepare the Mojo sauce: in a mixer set at high speed, combine the garlic, cumin, coriander, orange juice, and Xeres vinegar. Add olive oil as you con- tinue mixing.
