The Art of Controlling the Breakpoint

AIRFLOW CONTROL

The breakpoint, or the location where the high velocity and low velocity air streams collide and cut across the oven, is ultimately responsible for cooking your product.

Ovens with continuously rotating dampers (the most common on the market) do not allow you to focus the breakpoint air where you need it.

INCREASED PRODUCT YIELDS Customers report up to a 10% increase in product yields.

INCREASED CONSISTENCY Product cooks evenly, giving you greater consistency.

A Fusion Tech oven allows you to control the location and duration of the breakpoint in the oven, giving you the ability to evenly cook or dehydrate product on your racks. We designed every aspect of our ovens, from the supply and return ducts to the radiuses along the oven walls, to optimize and control the oven breakpoint. You won’t find this level of breakpoint control in any other oven on the market.

BETTER PRODUCT COLOR Consistent cooking results in better product coloring.

DECREASE COOK TIME Customers have reported up to a 35% decrease in cook time.

When every piece of product cooks evenly, consistent texture and coloring is possible and your overall yields will increase.

Alleviate Hot & Cold Spots

The standard oven on the market creates a cold spot in the top middle of the rack and hot spots on the bottom corners — giving you darker, drier product in the hot spots and lighter, less dry product in the cold spots.

Fusion Tech ovens allow you to control the location and duration of the airflow, alleviating hot and cold spots in the oven and cooking a consistent product.

FUSION COOK

Total Flow Control™ Total Flow Control™ is a patent-pending airflow control package that enables users to control the location and duration of the oven breakpoint —making Fusion Tech Ovens truly all about the airflow. Users can alleviate cold spots (areas of the rack that are not cooking consistently) by simply adjusting the graphical interface on the touch screen. Total Flow Control™ breaks the oven down into multiple zones — up to 5 zones on each wall and up to 5 zones across the oven floor — where airflow can be directed, giving you control over every square inch of your oven. Customers have reported up to 10% increase in yields, up to 28% increase in product consistency, and up to 35% increase in truck capacity using Total Flow Control™. The design is simple: input the number of seconds you want the breakpoint to stay in a specific zone, and Total Flow Control™ positions and stops the dampers to keep air flow- ing in that zone.

You can see exactly where the air stream is while your oven is running. An easy to read display shows all the information you need in one place. Our Total Flow Control® system is “dummy proof” and easier than ever! Easy to Use

Features • Multiple Zones for Airflow • Set Independent Time for Each Zone • Never Needs to be Homed • Maintenance Friendly Electronics • Alarm & Fault History Reports Benefits • Increase capacity by up to 30% • Increase product yields by up to 10% • Increase moisture consistency • Increase product consistency • Increase product color consistency (product color identical instead of different shades) • Process all products consistently & efficiently — hung or screened

The Recipe Select screen lets you quickly select, edit, or add your airflow recipe. With 20 recipe slots the possibilities are endless. Most users find that they need only five (or less) air- flow recipes such as screened product, tightly hung product, and more. Recipe Selection

Oversized Fan An oversized, VFD controlled fan (instead of sin- gle speed) provides high volume, forced airflow recirculation (minimum of 16 air changes). Plug fan shown. Other styles available:

Supply Ducts Two-sided knife style supply ducts with slots provide uniform airflow and greater breakpoint control.

Jack Shaft Damper System Dampers are positioned and controlled together with a jack shaft system rather than using chains that stretch out over time and cause the dampers to go out of position from each other.

Airflow Control Features

Fusion Tech ovens come standard with the following airflow control features, shown in red. • Knife Style Hinged Supply Ducts • Hinging Lowered Return Duct • Radius (Coved) Corners • Jack Shaft Damper System • Oversized Fan Controlled by VFD

• Forward Curve Fan • Reverse Curve Fan

CIP Sanitary Spray Balls Sanitary spray balls in the supply & return ducts, and fan housing provide 360° cleaning of the duct work.

Damper Access Port Access the dampers from outside the oven for ease of tuning if ever needed. Good for certifying the oven.

Maintenance Features

Hinged Supply & Return Ducts Hinged supply and return ducts allow for easy maintenance access, inspection, and manual cleaning of all ducting.

Fusion Tech ovens come standard with the following maintenance friendly features, shown in green.

• Damper Access Port • Vacuum Door Seals • Psychrometer Pan Port • Hinged Supply & Return Ducts • Fixed Return Airflow • Jack Shaft Damper System

Door Flush to Face Door is flush to the face of the oven cabinet, eliminating bacteria harboring points. Air bladder seals provide a superior seal than compression seals. Psychrometer Pan Port Access the psychrometer pan and wet / dry bulb through an access panel in the return duct. Replace the wet sock in seconds with this no tools required design. Get accurate humidity readings in return air as opposed to supply air. Lowered Return Duct V style Return duct is designed to lessen tur- bulence and air rotation. Flat return ducts do not allow air to return as efficiently as a V style return duct. No Slides on Return Duct Holes found in the return ducts eliminate the use of metal on metal slides, which causes bacteria growth and makes it easier to balance the oven.

Seal Welded Seams TIG Welded wall skins prevent the build up of bacteria found in ovens with seam gaskets.

Fusion Tech ovens come standard with the following cleaning and sanitation features, shown in blue. • Interior & Exterior Seal Welded Seams Cleaning & Sanitation Features

Rockwool Insulation Walls, roof, and doors are fully insulated with Rockwool insulation, that has an insulation rating up to 1,100° and is waterproof.

• No Slides on Return Duct • CIP Sanitary Spray Balls • Hinged Supply & Return Ducts

Stainless Steel Frame Heavy duty formed structural channels and angles provide a more robust structure.

Structural Features Fusion Tech ovens come standard with the following structural features, shown in light blue. • Rockwool Insulation • Heavy Duty Formed Structural

Vacuum Door Seals Provides quick deflation and reduces the potential of tearing by fully retracting the seal into a protective door channel. Removable lower face of the door allows for easy gasket replacement.

Radius (Coved) Corners Coved (or radius) corners enhance airflow velocity and reduce the degrading of the oven breakpoint as air moves down the walls and across the floor of the oven. They also prevent the build up and sitting of fluids in the corners of the oven.

Diamond Floor Plate Oven floors are constructed of heavy duty stainless steel diamond floor plate for safety.

• Diamond Floor Plate • Door Flush to Face

Airflow Simulation Fusion Tech utilizes SOLIDWORKS Flow Simulation Intuitive Computational Fluid Dynamics (CFD) software to simulate airflow in real-world conditions, run “what if” scenarios, and efficiently analyze the effects of airflow, heat transfer, and related forces when designing an oven for you. Early in the design process, our designers easily simulate airflow, heat transfer, and fluid forces that are critical to the success of the design of the oven, allowing us to: • Show you the direction of airflow in your oven • Compare our oven airflow against our competitors • Optimize oven airflow for your product • Direct the breakpoint in a specific location • Enhance oven design for vertical and horizontal airflow • Determine oven components for optimal airflow

Oven Evaluations A Fusion Tech oven expert can provide an evaluation of your current oven, presenting you with suggestions to increase its efficiency and operation. Our 6 point evaluation covers every aspect of the oven relating to airflow and heat-retention, efficiency, food safety, and oven sanitation. We thoroughly examine your oven and compare it against the latest in food processing oven standards to improve your cooking operation. Upon completion, we will provide you with suggestions to improve or replace your oven. If you purchase a Fusion Tech oven, the cost of the evaluation will be refunded.

Our 6 Point Evaluation Covers: • Airflow — breakpoint formation & movement. • Balance — balance of air in the oven. • Efficiency — efficiency limiting factors. • Humidity System— is the right amount of humidity being created. • Sanitary Design — review potential bacteria harboring points. • Mechanical Components — are mechanical components operating efficiently. Practical Suggestions At the end of the evaluation, we will present you with practical suggestion you can take to optimize your oven.

See videos and learn more about our Airflow Simulation at ftiinc.org/airflow.

A

Airflow Optimized Design Using airflow simulation software allows us to see how every component in a Fusion Tech oven affects airflow and the creation and movement of the breakpoint. This data has been used to design and patent features that set the Fusion Tech oven above all others in controlling the location and duration of the breakpoint.

Nesting Truck The Nesting Truck is the standard choice for use in a Fusion Tech Oven, designed specifically to work with our Total Flow Control™ package to optimize capacity and consistency. These trucks nest for easy storage when not in use. Any obstruction on a smokehouse truck will hinder the movement of airflow within the oven, which is why the Nesting Truck features a minimal side design, 12” clearance from the floor, and two wheels (rather than three) on each side to enhance airflow within your oven. Constructed of high grade stainless steel, the Nesting Truck exceeds all AMI Sanitary Design requirements for use in a food processing facility and is durable enough to withstand the most demanding environments.

Nesting Tree The Nesting Trolley Tree is the standard choice for use in a Fusion Tech Oven, designed specifically to work with our Total Flow Control package to optimize capacity and product consistency. We took the airflow-optimized design of the Nesting Truck and applied it to a hanging tree for use with an overhead track. Any obstruction on a smokehouse tree will hinder the movement of airflow within the oven, which is why the Nesting Trolley Tree features a minimal side design to enhance airflow within your oven. Constructed of high grade stainless steel with 100% TIG welds, the Nesting Trolley Tree exceeds all AMI Sanitary Design requirements for use in a food processing facility and is durable enough to withstand the most demanding environments.

CIP Skid

The CIP Skid is a high capacity, clean-in-place tank and pumping system designed to efficiently and effectively clean and sanitize your Fusion Tech oven. Customer supplied fresh water fills the CIP Skid tank through the fresh water inlet. Sensors located at the top and bottom of the tank read water pressure, temperature, and level, and safety switches shut the system down if the water level gets too high or too low, respectively. When a Clean Recipe is run on the oven control panel, water is pumped from the CIP Skid tank to the mixing pipe, where cleaning or sanitation chemical agents are metered into the fresh water stream to obtain the precise mixture you require.

CIP Skid Benefits: • Ensures correct cleaning and sanitation chemical doses • Chemicals are kept separate from clean water • High and low water sensors • Holds 600 gallons of fresh water • Read pressure and temperature on oven control panel • Easily connect cleaning and sanitation chemical containers

CIP Skid Tank Holds 600 gallons of fresh water to pump through system.

Steam Sparging Port (back) Add steam to the holding tank to increase to the desired temp range.

High Level Switch (back) Measures level of water in tank and shuts off incoming water when activated.

Gravity Fed Dosing Venturi effect adds cleaning and sanitation chemical into the line to be mixed with fresh water.

Reduce cleaning and sanitation time, optimize your cleaning process, and save money with the CIP Skid!

Chemical Container Shelf Holds cleaning and sanitation chemical containers while connected to the pumps.

Belly Comb Removers The Belly Comb Remover is an innovative and automated solution for safely removing 8 and 10-tine wire combs from pork bellies. Designed in response to worker injuries caused from the hitting and pulling that occurs when trying to remove belly combs, the Belly Comb Remover is easy to use. Simply place the up to 10-tine wire belly comb into the machine, push the switch, and the machine grips the comb and pulls it out. Two options exist for how the removed combs are discharged: they can exit through the chute into a bin located below or exit from the front for manually stacking on a cleaning cart. Larger pork processors have reported an increase in productivity and a decrease in worker injuries using the Belly Comb Remover in their facilities.

Safety Guarding Keeps hands clear of moving parts and holds belly in place while comb is removed.

Belly Comb Chute Removed combs discharge into chute for quick and easy removal. Can be mounted on either side of the cart.

Belly Table Place belly on table and insert into remover.

Foot Switch Cover Protects foot should belly fall while being placed on table.
