When you host an event where alcohol is being served, you are responsible for taking steps to protect your guests from harm, including those who may be impaired or intoxicated, and ensuring everyone gets home safely. Tips Whether you’re planning a dinner for four or a party for twenty, these tips will help you provide a safe and enjoyable get-together for both you and your guests.
As the host, drink minimally or not at all. If anything does arise, you will be able to manage it effectively and safely.

Serve drinks yourself or designate a responsible bartender to avoid overdrinking by guests. Measure your drinks appropriately by using a shot glass or jigger, and avoid serving double drinks.

Have food readily available. Create your own charcuterie board with a variety of cheese, meats, crackers, bread, nuts, vegetables and fruit.

Always ensure that you provide non-alcoholic and low-alcohol beverage options. As a bonus, offer a mocktail as a signature drink. Check out some of our favourite mocktails on the next page.

Never serve alcohol to minors and never serve guests to the point of intoxication.

3 dashes Worcestershire Sauce
1 dash Hot Sauce
1 part Tomato and Clam Juice
Garnish with Pickles, Celery or Bacon to taste
Run a lime wedge around the rim of a glass and twist to coat in celery salt. Fill glass with ice and add Worcestershire and hot sauce. Fill with tomato and clam juice then stir. Put your selection of garnishes on a skewer, add to the glass and serve.
GAME DAY RADLER
1 part Zero-Proof Beer
1 part of Fresh Lemonade
Combine zero-proof beer and lemonade in a frosted pint glass. Garnish with a lemon wheel and enjoy!

2 tbsp Canned Pumpkin Puree
Canned Peach Slices (8-10 slices, drained)
2 tbsp Sugar
CARAMEL APPLE
2 cups Sparkling Apple Cider
Cinnamon Sugar
1 tsp Pumpkin Spice
4 oz Apple Juice
Citrus Slices and Mint Leaves
1 ½ oz Caramel Syrup
Freeze the peach slices. Mix together pumpkin puree, sugar, pumpkin spice and 2 tbsp sparkling cider. Divide peach slices in two glasses. Pour pumpkin sugar syrup in the glasses and top with apple cider. Garnish with peach slices, citrus slices and mint leaves.

Apple Slice, Thyme Sprig, and Cinnamon Stick
Rub the rim of the glass with the lemon wedge and dip the glass in the cinnamon sugar to coat. In a cocktail shaker, add apple juice, caramel syrup, and lemon juice. Shake well and strain into prepared glass. Garnish with apple slice, thyme sprig, and cinnamon stick.

The word whisky is derived from an Irish Gaelic term, uisge beatha meaning “water of life.” The spelling whisky is generally
used for whiskies distilled in Scotland, Canada, Australia and Japan, while whiskey is used for the spirits distilled in Ireland and America. Whisky is a strictly regulated spirit with many classes and types from around the world. All whisky production must include the fermentation of grains, distillation, and aging in wooden barrels. The amount of time spent in oak casks is what determines the age of a whisky, with the minimum legal amount of time varying by country.

choose a wine that pairs best with the turkey itself, specific vegetables, cranberry sauce or even the gravy. Off-dry whites and fruity reds are my top wine pairings for this meal, but most white, rosé and bubbles will work too as they are so food- friendly! Rieslings, especially off-dry versions from Germany and certain New World regions (Canada and Washington State for example), are quite common at turkey feasts. The residual sugar in these wines often matches perfectly with things like sweet potatoes, cranberry sauce and pumpkin pie!
Proseccos are a must at my house during the holidays. No matter what part of the feast you are trying to pair a wine with, this sparkling from the Veneto has the required acidity to cleanse the palate after each bite. Serve this gem to your guests as they arrive as an aperitif, and see them ask for more throughout the evening!

I love dry rosés with a traditional turkey dinner, and have always included one in any flight that I share with friends and family during the holidays. Tom Gore gives us what we need in this year-round rosé – fruit, and lots of it! A lovely complement to both white and dark meat.

Pinot noir is a go-to red wine pairing for turkey dinner, as most pinot noir wines are generally light to medium bodied in weight, with bright acidity and gentle tannins, hence the ultimate food friendliness of this grape variety. The gentle aromas and flavours of red and black fruit, layered with subtle savoury and earthy notes, spice and often a distinct floral or gamey note make pinot noir a very versatile wine to pair with the many different turkey and stuffing preparations. The bright acidity brings out the juiciness in the turkey as well as the flavour in sweet potatoes, cranberry sauce, mushroom and other vegetable dishes. The gentle tannins marry well with all the green vegetables such as brussels sprouts, kale, chard or spinach, as well as the proverbial dish of green beans. I always suggest having more than one wine on the table. Pour a small amount in each of your guest’s glasses and let them pick their favourite. It will be an eye-opening experience for all involved!
If I had to choose only one red wine to have with a traditional Newfoundland and Labrador turkey dinner for the rest of my days, then it would have to be a light-medium-bodied pinot noir like this example by Stoneleigh. This wine is juicy, fruity, and the perfect weight not to overpower the dish. Its red fruit profile, especially tart cranberry notes, will pair perfectly with any bite containing cranberry sauce.

Liqueurs refer to a wide variety of sweetened and flavoured spirit based drinks. The base spirit in liqueurs is typically brandy, rum or whisky but liqueurs can also be made using other base spirits. Flavours vary widely but typically, liqueurs fall into one of five main categories: cream liqueurs, herbal liqueurs, fruit liqueurs, seed liqueurs and nut liqueurs. Some liqueurs can be enjoyed on their own but the vast majority are used as ingredients in an ever-expanding catalogue of delicious cocktails. In 2022, came the opportunity Chef Josh had been working toward when he opened Par 70, his very own restaurant. Par 70 by Chef Josh is a full service restaurant located at the scenic Gander Golf Club. This restaurant is open to everyone, not just members of the Golf Club, and operates from April to December. In the first year alone, Par 70 served three thousand orders of one special burger that has become somewhat famous with the local community – the Blueberry Bacon Burger. The combination of the 100% pure ground beef patties (with no additives), melted Havarti cheese, pickled red onions, Blueberry BBQ sauce, basil aioli, arugula all on a toasted brioche bun, has made this one of the most sought after bites in central Newfoundland. Chef Josh was kind enough to share the key ingredients that make his signature burger and fries so delicious – the basil aioli and of course, the Blueberry BBQ sauce.
PARFUSION
1 oz Captain Morgan White Spiced Rum 2 oz Grape Juice Ginger Ale Lemon Slice
Add Captain Morgan White Spiced Rum and grape juice to a tall glass filled with ice. Top with ginger ale and stir. Garnish with a lemon slice.
BLUEBERRY BBQ SAUCE
4 cups blueberries fresh or frozen ½ cup apple cider vinegar ½ cup packed dark brown sugar 1 tsp grated fresh ginger 1 tsp fancy molasses 1 tsp salt 1 tsp chili powder ¼ tsp ground cinnamon ¼ tsp ground allspice ¼ cup of Captain Morgan Original Spiced Rum
Place all ingredients in a large pot and simmer for 1 hour or until blueberries break down a little. Stir often as to incorporate all the flavourful ingredients. Let sauce cool and place in a sealed container. This sauce can be refrigerated and enjoyed for up to 90 days. This sauce is mild. If you want to add a kick, simply add a 1/2 teaspoon of cayenne pepper and 1 teaspoon of cajun seasoning.

Ruffino’s Chianti from Tuscany is primarily sangiovese with the remainder of the blend made up of cabernet sauvignon and merlot.
