It is an absolute pleasure to welcome you to the inaugural issue of our magazine. I am so excited as we launch what will become your go to source for information and insights designed to elevate your experience in this truly special area of Western North Carolina. As I look back over the past year, creating this labor of love that you are now reading has been quite a journey. In the early days of 2020, with much of the country shut down due to the pandemic, we were not sure what was in store for our area. Businesses were in uncharted territory. Local shops, UHVWDXUDQWVKRWHOVDQGUHDOHVWDWH¿UPVZHUHDOOXQFHUWDLQRIWKHIXWXUH and if they would survive that trying time. Even as NC opened back up with restrictions, and real estate on the Plateau came roaring back to life, many RIRXUORFDOVKRSVDQGUHVWDXUDQWVFRQWLQXHGWRVX̆HU$WWKHWLPHZHZHUH not sure who was going to make it through, what our content should look OLNHRUZKLFKEXVLQHVVHVZHVKRXOGLQFOXGHLQRXU¿UVWLVVXHRI Elevate . Cashiers Farmers Market & On The Side BBQ One of Cashiers’ most popular and successful locally owned businesses is the Cashiers Farmers Market and On The Side Barbecue. Sitting at the crossroads of Highway 64 and Highway 107, you can’t miss it when you cruise into town. As you enter the market, you’ll likely be greeted by one of the owners’ Golden Retrievers, who are completely unfazed by the bustle around them. The décor is reminiscent of days gone by, with crates of local produce and old advertising signs displayed prominently. Yet the products they carry UHSUHVHQWWKH¿QHVWLQSUHSDUHGIRRGLWHPVFKHHVHVHDIRRGZLQHDQG more, including gift items. On The Side BBQ is, you guessed it, on the side of the market and sells fresh barbecue and more, as individual meals as well as certain items in bulk. Owners Tom and Robin Crawford have successfully created what is FRQVLGHUHGDQ³LQVWLWXWLRQ´LQ&DVKLHUVE\R̆HULQJZKDWWKHLUFXVWRPHUV want while adding a heaping helping of nostalgia. As their website says, “it’s like old home week… all the time.” And that is a feeling that your average grocery store just cannot provide.
Q You’ve been in business since 1995. How has the business changed over the years? What has stayed the same? A When we started in 1995, we were in a tent behind the Exxon gas station. We sold mainly produce and had a few jar items. We had no employees other than us (Tom and Robin Crawford). Now, we sell not only produce, but many gourmet food items. We have prepared foods, meat, seafood, cheeses, wine, gift items, baked goods and much more. :HDGGHG2QWKH6LGHLQ:HQRZVWD̆IXOOWLPHHPSOR\HHV One thing that has stayed the same is the loyalty of our customers. Over the years we have seen many come and go. Some have died, some have gotten old and moved away. But every year when we reopen for the season in April all of our regulars are so happy to see us. They come in and welcome us and make us feel so happy to be back. “The loyalty and kindness of our customers is amazing!”

Q What’s the most popular item you sell? What’s the one prepared food item that people MUST try when they shop at the Farmers Market? A This is a hard one. Everyone has their favorites. We always say that our store is so small we can only keep items around that sell quickly and are popular. We have a freezer full of prepared foods and everything is delicious! We make chicken salad daily and most days UXQRXWVRWKDWLVGH¿QLWHO\DELJKLW$OVRRXUKRPHPDGHYDQLOODLFH cream is a favorite. We sell a ton of our homemade salsas and when we run out people have been known to cry. Q Who are some local suppliers that sell through you and what do they provide? A The most popular thing we sell by an outside local source would be Darkcove goat cheese. We have sold this for probably 20 years. We sell it out of the freezer in pint containers and customers always want to “stock up” on it. We also sell fresh local eggs, goat milk soap (Uddermudder), many baked goods (the Chocolate Heaven Company, Lotsa Loaves), trout dip and smoked trout (Sunburst) honey (Killer Bee), in the summertime pretty much all of our produce is local. We try to stay local as much as we can. Many of our products are made in Asheville and surrounding areas. Q How many pounds of BBQ do you normally sell per month during the high season?
A We smoke over 6,400 pounds of pork during the busy months. Do people ever ask to buy your dogs? A Oh yes, they do! We tell them “They are priceless.”

Several rhododendrons and hydrangeas varieties also bring color to WKHODQGVFDSHLQWKHVXPPHUPRQWKV1DWLYHÀRZHULQJSHUHQQLDOV such as beebalm, ironweed, asters, and wild geranium, not only provide color and interest in the landscape, but also attract pollinators and birds. Q How long have you owned/worked with the company?
A I began working in landscape design in 2004 during my graduate career at Clemson University and began Byrd Landscape Design in 2006.
Q What made you get into this industry?
A I have always enjoyed art and spending time outdoors. My mom worked for a landscape architect in Birmingham, Alabama and I was always amazed at her talent and ability to create a design vision on paper, then watch it come to life in the landscape. As a horticulture major at Clemson University, I focused my studies in landscape design, and was inspired to pursue that as a career with the encouragement and knowledge shared by my mentor and professor Mary Haque. Each project, client, and site are unique, and I enjoy the creative process and connecting with clients to provide outdoor spaces for clients that they will enjoy with their family and friends for years to come.

A Sustainability has become a strong core value in both the landscape industry and what many clients desire in their home landscapes. Thoughtful landscape design has the capability to provide peaceful havens for clients to enjoy the outdoors, as well as healing and enhancing the surrounding land. Well-designed functional outdoor spaces encourage FOLHQWVWRHQMR\WKHPXOWLWXGHRIEHQH¿WVSURYLGHGE\VSHQGLQJWLPH outdoors. Incorporating native plants for pollinators and wildlife has become more and more popular, as well as designing for low maintenance and selecting plant material that is well suited for each individual site and environmental conditions to reduce or eliminate the need for chemicals.
Q What’s your favorite part of the business?
A Meeting with clients and forming relationships to create outdoor spaces and experiences that are unique to each client and responsive to their needs and respectful to the surrounding land. I enjoy being able to communicate ideas through design and renderings. I am grateful to be able
to collaborate with several talented landscape installation companies in the area to bring these designs to life. Knowing that clients are interacting with the outdoor spaces and environment is invaluable.
Q What are some trends you are seeing in the industry right now?
A During the pandemic, many people quickly discovered the value of spending more time outdoors and experiencing the restorative benefits of nature. “Taking time to slow down, breathe, and be fully present and observe the natural world around us creates a deeper connection to ourselves, others, and our environment. ” There is a great sense of satisfaction from tending to a garden, watching it grow and learning from challenges that may arise. Even a small comfortable seating area surrounded by a few plants can provide solace from stress by providing an opportunity to connect with nature.
Home gardens and sustainable gardening practices are becoming increasingly desirable. Kitchen gardens of all scales are being incorporated more frequently into home landscapes. Raised planting beds, groups of containers, or integrating fruits, vegetables, and herbs into the landscape can provide a variety of food sources for many months of the year. $ORQJZLWKPRUHRSSRUWXQLWLHVIRUVHOIVẊFLHQWJDUGHQLQJPDQ\ homeowners are requesting plant material to provide food for birds and attract pollinators to the garden, “rewilding” once barren lawns with a SOHWKRUDRILQYLWLQJÀRZHUVDQGVHHGVRXUFHV,QFRUSRUDWLQJDYDULHW\ of well-suited native plants is recommended to support wildlife in the landscape. Multi-functional outdoor spaces are also extremely popular in the home landscape. Seamlessly connecting the home to the outdoors for entertainment has been a long-time trend in residential landscape design, and probably even more so now. With more people working from home, creating havens for retreat or opportunities to bring the ṘFHRXWVLGHZKHQSRVVLEOHLVHVVHQWLDO:HOOGHVLJQHGRXWGRRUVSDFHV that can be used for multiple purposes will provide opportunities to H̆RUWOHVVO\HQMR\WKHEHDXW\RIWKHQDWXUDOZRUOGDURXQGXV
Q Who is your client base?
A I specialize in residential landscape design primarily in Cashiers and Highlands in western North Carolina as well as the Lake Keowee area in upstate South Carolina.

Their vision focused on providing creative, unique, and fun opportunities to bring family members and guests together, with seamless transitions between the home and outdoor spaces around the property, in addition to providing a space for gardening, pollinator plants for bees, and a variety

of blooms throughout the year. The area surrounding the home and guest house was VWURQJO\LQÀXHQFHG by an English cottage garden theme, blended with local mountain style. The client worked closely with Scotlyn’s Yard Landscaping and Smathers Excavating to create a series of ponds and waterfalls meandering through the property and integrating these features seamlessly with the home.
A stone seating area cantilevered over the large pond is easily accessed from the home for entertaining and provides an easy launching site for ND\DNVDQGÀRDWVGXULQJWKHVXPPHUPRQWKV1HDUE\DNLWFKHQJDUGHQ with raised beds provides easy access to vegetables and herbs from the home. A potting shed constructed of antique windows, doors, and barn wood is a short walk from the garden and is surrounded by a variety of ÀRZHULQJSHUHQQLDOVDQGVKUXEV7KHODZQDUHDWXFNHGDZD\LQDQDUHD EHORZWKHSRQGSURYLGHVÀH[LEOHVHDWLQJVSDFHDGMDFHQWWRDZDWHUIDOO stream. Crossing a small stone bridge leads to a meandering woodland footpath to the guest cottage on the property.
I collaborated with XStream Ponds and Grandy Mountain Farm and Landscapes on a unique project in Mountaintop Golf Club in Cashiers,
NC. Stone steps meander along a naturalistic waterfall from the upper level outdoor living area to a large, multi-functional stone ¿UHSLWWHUUDFH7KHWHUUDFHLVFDQWLOHYHUHGRYHUWKHORZHUSRQGDUHD providing a direct connection to the calming capabilities of water in the landscape. Large boulders are carefully integrated into the terrace to double as additional seating. A combination of native plant material and a variety of blooming shrubs and perennials provides interest throughout the seasons, while providing food and nectar sources for birds and pollinators. Crossing the small pond over a few large stepping stones will lead you to another, smaller seating area and lawn. Wooden swings are placed under the covered terrace, to provide an element of play in the landscape while swinging over the pond. A residence in The Reserve at Lake Keowee creates a sense of wonder and discovery as the homeowners and guests explore the landscape. An outdoor kitchen and dining terrace adjacent to the home and screened porch allows for guests to easily transition from the home to the outdoors to enjoy the stunning views of Lake Jocassee and the mountains of North
Carolina and surrounding gardens. Walking across an oval lawn will lead to a secluded pergola-covered Wine Garden, where the
homeowners regularly enjoy evenings with friends and family. As you meander through the gardens and stone steps to the lower lawn, you ZLOO¿QGDQRSHQ9LHZLQJ7HUUDFHVPDOOHULQVFDOHWKDQWKHXSSHU dining terrace, and a pleasant place to soak up the sun and expansive
views or stargaze in the evenings. The lower lawn bordered with masses RIURVHVDQGÀRZHULQJSHUHQQLDOVOLQNVDVWRQH¿UHSLWWHUUDFHDQGKLGGHQ grotto and spa. Further along, a vine-covered arbor serves as a transition to stone steps that meander downhill to an elaborate tree house and picnic area. The two-story treehouse is truly a work of art and provides children and adults opportunities for discovery and play in nature.

Located on Main Street in downtown Highlands, Wolfgang’s has been locally owned and operated by Wolfgang and Mindy Green for 27 years. Q What is your favorite part about owning your restaurant? A While of course I love cooking, my favorite part is interacting with the customers. I do that each night. I love getting their feedback and knowing they have enjoyed their meal. Mindy loves working with patrons on creating their perfect private party. We host a lot of dinner parties, rehearsal dinners, wedding receptions and more here at the restaurant. Mindy enjoys getting to know the customers and making sure their special occasion is the very best it can be.
Q What changes have you seen in the culinary scene on the Plateau since you opened Wolfgang’s in 1995? A Over the years, the dining options here have become more sophisticated.
